TRex Steak Method

- Start with a 1.5 to 2 inch cut (thicker the better)
- Sear on lava hot direct coals until char on each side (aprox 90 to 120 sec)
- Rest steaks at room temp for 15 to 20 min
- Indirect cook at about 400 for 5 min on each side
